Legacy Recipe: Momma’s Chicken Casserole

Only one day between trips finds me short on time to write a post. Since it’s been a while since I shared a recipe, I thought it would be helpful if I did – both to me and to you.

This recipe was one of my mother’s recipes. It’s easy to make and comes in handy for a quick meal. You can make it early in the morning and just pull it out of the refrigerator and pop it into the oven for dinner. Add a salad and dinner rolls and you have a great meal for your family. Enjoy!!

Ingredients:

2 cups chopped chicken (rotisserie chicken works great)

2 cups chopped celery

½ cup chopped onion

½ cup salad dressing (I use mayonnaise)

1 can cream of chicken soup

1 cup cooked rice

Salt and pepper to taste

Ritz crackers (crushed) and mixed with melted butter

Directions:

Mix together and place in a buttered 3 quart baking dish.

Bake about 1 hour at 350 degrees.

Take out of oven and cover with buttered ritz cracker crumbs.

Return to oven until brown.

Note: This can be doubled for a large casserole to take to a potluck.

I hope you enjoy this easy dinner or potluck dish. I love to make it because it reminds me of what a great cook my mother was.
