    Legacy Recipe for Leftovers

I don’t know if you use up your leftovers at your house or not. I’ve been known to leave them in the refrigerator until they are growing fur and then throw them out. Lately in an effort to not eat out so often, I have been using up our leftover food. I have a friend who said she always used what they had left over. Once a week she would fix a “must-go casserole.” I never tasted it and hope I never have to! However, I discovered a good and easy way to make at least two great meals using one roasted chicken.  Now it’s easy because I buy the roasted…

    Legacy Recipe: Skinny Pie

With warmer weather approaching and many people trying to get in better shape for their summer clothing, I thought I would share this recipe. It is not original to me. I got it from a group of friends who are all supporting each other in their health journey. Enjoy! 1 small box sugar free Jello (any flavor) 2 low fat yogurts (same flavor as Jello) 1 tub sugar free Cool Whip 1 graham cracker crust (can do the Keto crust for even lower carbs) Mix the first three ingredients together until smooth. Spread in crust. Can either freeze or chill. Serve cold and enjoy! (Editor’s Note: I forgot to move…

    Legacy Recipe: Skroodle Salad

“In the good ole summertime” the heat can get us down. The thought of cooking a large meal sounds like torture, but this salad recipe I’m sharing today is so good and filling. I’ve had it for years but it first appeared in the Metropolis Planet, my hometown newspaper. A woman named Linda Adam won a recipe contest with this recipe!  It’s perfect for a meal (and perfect for a post since I’m overloaded with work to do). I hope you enjoy it!! SKROODLE SALAD 1 can red beans (black beans will work too) 1 can mixed vegetables (or one pkg.frozen vegetables thawed slightly) 1 package (8 oz) skroodle noodles…

Legacy Recipe: Low Carb Taco Bake

As I often do, I’ve had another very busy week. When you have physical therapy three times a week, a ladies’ Bible class to teach, two doctor’s appointments, a visiting grandson who was in our area preaching a meeting, and some writing to still do on lessons for PTP Spark in St. Louis in a few weeks, you take the easy way out and just do a good recipe for your post on Legacy of Faith.  So, here you go… LOW CARB TACO BAKE CRUST: 4 ounces cream cheese, softened 3 eggs 1/3 cup heavy cream 1/2 teaspoon seasoning for Tacos 8 ounces cheddar cheese, shredded (about 2 cups) Beat the…

    Legacy Recipe: Lasagnaoli

For those of you who are used to reading Mom’s delicious recipes, don’t be offended at the ease of this recipe! This one is for those of us who need a faster, easier way to make traditional tasting meals. My oldest, Luke, got to come home for a few days from his summer internship and requested this for one of his “home-cooked” dinners. Hope you enjoy! Ingredients: 1 package frozen ravioli (you can change up the flavor; we prefer spinach or cheese) 1 pound of ground beef, browned with onion 1 jar of spaghetti sauce (we like the mushroom) 1 8 oz. package of shredded mozzarella Cottage cheese to taste…

    Legacy Recipe: Momma’s Chicken Casserole

Only one day between trips finds me short on time to write a post. Since it’s been a while since I shared a recipe, I thought it would be helpful if I did – both to me and to you. This recipe was one of my mother’s recipes. It’s easy to make and comes in handy for a quick meal. You can make it early in the morning and just pull it out of the refrigerator and pop it into the oven for dinner. Add a salad and dinner rolls and you have a great meal for your family. Enjoy!! Ingredients: 2 cups chopped chicken (rotisserie chicken works great) 2 cups chopped celery ½…

Believe it or not, the election is not the only thing that is just around the corner! The holidays are just weeks away, and since I’ve been busy with physical therapy on my new knee, I decided to share a family favorite recipe that will make your holiday meals even better. Legacy Recipe: Skroodle Salad

I have finished Cousins’ Camp 2020 and now I am preparing to go video my lessons for Polishing the Pulpit on Monday and Tuesday. Then we will travel to Louisville for Jim to speak on Wednesday night. After that we will FINALLY be celebrating our 50th wedding anniversary with a trip to a Bed and Breakfast in the mountains…so I’m packing for that trip, too.   I said all of that to say that it is time for another recipe for my post this week. It is a delicious cool summer salad that is a full meal within itself. I got the recipe years ago from a newspaper in Metropolis Illinois, my home town. I…

Legacy Recipe: Mom’s Easy Strawberry Pie [Free Printable]

Yay! It’s strawberry picking time here in Kentucky. I love this time of year for lots of reasons, but one of my favorite reasons is because I love strawberries. While I’m not making pies these days because of a different eating plan, I still use this recipe for guests and have many fond memories of making and taking this pie to potlucks and other gatherings. I hope you enjoy it! 1 cup water ½ to ¾ cup sugar 2 and ½  Tbsp cornstarch Pinch of salt 2 and ½ Tbsp strawberry gelatin (sugar free doesn’t work) Drop of red food coloring (optional) 3 to 4 cups of washed strawberries (sliced if you prefer) 1…
