Legacy Recipe for Leftovers

I don’t know if you use up your leftovers at your house or not. I’ve been known to leave them in the refrigerator until they are growing fur and then throw them out. Lately in an effort to not eat out so often, I have been using up our leftover food. I have a friend who said she always used what they had left over. Once a week she would fix a “must-go casserole.” I never tasted it and hope I never have to!

However, I discovered a good and easy way to make at least two great meals using one roasted chicken.  Now it’s easy because I buy the roasted chicken at Sam’s for $4.98. You can hardly buy one uncooked for that! On that day we have roasted chicken, vegetables and salad. I then take the rest of the chicken off the bone, cut it into small pieces and store it in the refrigerator.

On the next day I was looking for a way to use the chicken in another way, so I came up with a recipe that I concocted and Jim loved it! I’m going to share it with you because it is so easy and I’m sure you will have most of the ingredients you’ll need to make it.

Chicken Broccoli Casserole

Butter a 9 x 13 casserole dish

In a large bowl place:

Chopped chicken (I cut mine into bite sized pieces)

A bag of steamed broccoli cuts (drained well)

½ of diced red pepper

½ cup of diced onion

Italian spices to taste

Salt to taste

In a smaller bowl place:

1 jar of alfredo sauce

¾ cup of sour cream

½ cup of grated parmesan cheese (I used the one in a bottle)

Mix this thoroughly and then pour over chicken and broccoli mixture

Mix it all together and place in your buttered casserole dish

Cover with grated mozzarella cheese

Bake at 350 for about 30 minutes.

Add a salad and your meal is complete.

I ended up putting what we had left over in the freezer and thawed it a few days later and ate it again for another meal. That’s 3 meals out of a $4.98 chicken!!
